Cooking Breakfast for the kids…

Community Foodbank of NJ is the largest hunger relief organization in the state of New Jersey. I’m so blessed to be working with the Community Foodbank chefs to develop delicious, healthy meals for children and seniors. Today we’re making breakfast sandwiches. Baking & Pastry Instructor Brandon Snyder and his class develop dozens of delicious, healthy breads, scones and biscuits for the kids meal weekly.

I work closely with Culinary Director Paul Kapner & Culinary Manager Daryl Walker to develop delicious, healthy ‘scratch’ recipes such as plant based chili, turkey & veggie meatloaf, chicken pot pie, Italian minestrone etc…. Today we developed breakfast patties for a kids breakfast sandwich on a whole wheat biscuit.

Breakfast Sausage Patties

  • 1 lb lean ground turkey

  • 1 tsp kosher salt

  • 1 Tbsp poultry seasoning

  • 1/4 tsp white pepper, ground

  • 1/4 tsp thyme, ground

  • 2 Tbsp apple sauce (I like Mussselmans)

    Mix together well and form patties. Bake on parchment lined sheetpan until browned. Enjoy now and freeze a few for next time.
