County Smoak

I’ve been blessed to have met thousands of amazing people in my career. Many were students I taught (or they taught me). I’ve cooked and shared fantastic meals with cooks, chefs, gardeners, farmers etc..  from all over the world.

I’m dedicating this section of my website to these interesting and inspiring people I’ve met in my travels.

I remember Ken Hess from my days as an instructor at the CIA…. We all knew he was going to be special! I’ve followed his career for years and finally visited Ken at County Smoak in Lynchburg, Virginia. Ken and his wife Jess cook and serve the most amazing BBQ….  We drove almost 2 hours out of our way to visit and enjoy their fare!

The turkey, brisket, chicken, ribs, pulled pork and sausages are all amazing but when a classically trained chef/ pitmaster makes sides, it’s pure magic.

I especially love their collards, baked beans, mac n cheese and salads. Definitely worth a visit.
